Hitsumabushi, a Nagoya specialty, is the quintessential enjoyment of eel.
The eels used at this restaurant have a variety of thoughts and particularities.

With this in mind, our artisans have trained themselves day by day to master the techniques of eel connoisseurship, processing, skewering, and charcoal grilling.
We carefully prepare and serve each fish based on the knowledge and skills we have cultivated.
