I am the PR person in charge of unagi (eel) Okafuji.

It is the time of year when the trees are full of the breath of spring.
How is everyone doing?

In this blog, we would like to introduce a Nagoya specialty, "Hitsumabushi".
 

Four times delicious in one dish [Hitsumabushi].

~We are also very particular about the eel we use.

Our restaurant is a branch of the nationally renowned eel restaurant "Unafuji",
We serve delicious eel dishes to everyone.

The eel used is "Ao Unagi" (blue eel), which is bright blue in color like Unafuji.
Only about 20% of the eel harvest is rare, and even the tail is fleshy and tender.
It is also called "phantom eel" because of its rarity and delicious taste.

The hitsu-mabushi introduced here uses such prized blue eel in a luxurious manner.
The surface is fragrant and the inside is soft and fluffy with a large charcoal fire of over 1,000°C,
Please take your time to enjoy the eel carefully grilled by hand one by one.

Hitsumabushi can be enjoyed in four different ways.
First, divide the eel and rice in the hittsu into four equal portions using a rice scoop.
Then please enjoy them in their own way.

1: At first, enjoy the original flavor of the eel as it is.
2: Next, top with the condiments that come with the hitsu-mabushi.
