The best part of Hitsumabushi is that you can enjoy the change in flavor in three different ways.

 1. First, please enjoy the taste of the eel itself, which has been grilled on the spot, in a bowl.

 2. Next, add your favorite toppings such as leek, wasabi, and other "condiments" as desired.

 3. Finally, pour soup stock over the dish and enjoy it with salads and ochazuke (rice with green tea).
 
With these three ways of eating, it is fun to taste everything from the original flavor of the eel to the warm and comforting ochazuke (rice with tea).
